Gorton’s Seafood Recipe Challenge: Grilled Tilapia Fish Tacos with Creamy Cilantro-Lime Dressing

Gorton’s Seafood contacted me several weeks ago to try their New! Grilled Tilapia.  We came up with the idea for me and fellow Rock On Mommie, Theresa (she’s also the founder of the Rockonmommies website) to each come up with a recipe using the Gorton’s New! Grilled Tilapia.

I’m sure many of you hear Gorton’s Seafood and immediately think ‘fish sticks’, but it is so much more than that!  They have an entire grilled seafood line and the New! Tilapia is awesome.  Each filet only has 80 calories, 2.5 grams of fat, and is packed with 14 grams of protein!  All you have to do is pop them in the oven for about 20 min. and you can add them to a pasta or salad for an easy, healthy dinner!

*hand picked and trimmed

*carefully selected fillets

*specially chosen for mild flavor

*quick frozen for optimal freshness

*100% inspected for the safest, highest quality

Now, on to the recipe challenge!  I decided to make Tilapia Fish Tacos with a Creamy Cilantro-Lime dressing.  It only took about 25 min. to make, start to finish and was so delicious even the P’s ate them!

Ingredients:

4 Gorton’s Grilled Tilapia Fillets

shredded cabbage (I used the bagged tri-color blend with red and green cabbage and carrots)

1-2 diced tomatoes

1 diced avocado

1 package corn tortillas

Creamy Cilantro-Lime dressing:

1 cup sour cream

2-3 tbs. chopped fresh cilantro

juice of 1 lime

1/4 tsp. garlic salt

1.  Cook Tilapia per instructions on box.

2.  in a small bowl combine sour cream, cilantro, lime juice, garlic salt and refrigerate until ready for use

3. dice tomato and avocado

4. pull tilapia with a fork to make ‘lumps’ of fish

5. warm tortillas in skillet

6. place cabbage, tomato, avocado on tortilla

7. drizzle dressing onto the taco

8. top with fish and serve!

***I made these kid friendly and didn’t include any spicy peppers.  If you want a spicy version add diced jalepeno pepper.

Kid Approved! P1 enjoyed these so much she asked for seconds!
