Broiled Tilapia Parmesan

So my dearest, sweet husband made me the yummiest Tilapia last night for dinner.  I’ve been requested to share the recipe, so here goes…

2 tablespoons Parmesan cheese

1 tablespoon butter, softened

2-1/4 teaspoons light mayonnaise

1-1/2 teaspoons fresh lemon juice

1/8  teaspoon ground black pepper

1/8 teaspoon dried basil

1/8 teaspoon onion powder

1/8 teaspoon celery salt

2 tilapia fillets

Directions

1. Preheat broiler, Grease (Pam) a glass baking dish

2. In a small bowl, mix the Parmesan, butter, light Mayo, and lemon Juice.  Season with dried basil, pepper, onion powder, and celery salt.  Mix well and set aside.

3. Lay Fillets in baking dish. Broil on top rack for 3 minutes each side.  Remove and cover with mixture on top side. Broil until top is browned, about 2 minutes.  Don’t over cook.  Fish should flake easily with a fork.

I always hate the about me section. I’m so many different things, I’m never sure how to narrow it down into a paragraph or 2. I love taking pictures, dancing in my living room, talking, I really love talking, and Traveling. I’m an Ex NFL Cheerleader, a “first wife” and now a first time mommy with a beautiful little girl. My life is far from boring and though there are times I long for boring, in the end I’d have it no other way!
